Dzama Rhum de Madagascar Cuvee Noire is a premium rhum agricole produced in the Indian Ocean island of Madagascar. Made in the traditional manner, the distillery is located in the northeast part of the island close to the city of Fianarantsoa. This rhum is produced exclusively from harvested pure cane juice, as opposed to molasses-based rums. The cane is first crushed and then fermented with yeast for 72 hours. The fermentation process gives the rum its renowned fruity and aromatic flavour. After distilling in copper alembic stills, this exquisite rum is aged in handcrafted Limousin oak barrels for no less than three years. The finished product has a golden yellow colour with an intense bouquet of floral and tropical fruit aromas. On the palate the rum expresses an harmonious balance between dry and fruity notes, with aromas of dried apricots, mango, honey, and spices, including nutmeg, anise and cinnamon. The finish is delicately smoky, with hints of toasted wood.
