Derrumbes as a brand is a journey through Mexico via mezcal, with each expression hand-selected to represent a different state's history, traditions and terroir. Owned by Esteban Morales, one of the country's premier experts on agave spirits, with a true curiosity and dedication to the traditions of agave spirits. San Luis Potosi is a land-locked state with high elevation, and rather desert like conditions throughout. With a lack of oak trees to use a fuel source for cooking the agave nd heating the stills, the producer here uses the discards of the agaves themselves, and thus leads to a much greener and brighter flavour-profile in the mezcal. Made using 100% Salmiana agave, and cooked above ground, this is a fantastic mezcal for those who want to try a mezcal that is far lighter in smoke than what is commonly available. Notes of green pepper and olive, this mezcal works beautifully in a martini.
