Sotol La Higuera is a brand that is part of the highly respected Casa Endemica house of Mexican spirits. While originally thought to just be another varietal of the agave plant, the Dasylrion plant (locally known as the Sotol plant) is actually genetically different, and behaves differently throughout its lifetime. Made in a similar fashion to traditional mezcal production, the spirit of sotol offers up many of the same characteristics one would expect from a mezcal, with natural sweetness and nuanced smoke. Within Mexico, it has a denomination of origin including the states of Chihuahua, Durango and Coahuila, and outside of Mexico, can also be produced in Texas and New Mexico. The La Higuera brand works with the famed sotol distiller Gerardo Ruelas Hernandez, who maintains the same process, but works with the different varietals of the dasylrion to showcase the broad diversity of the spirit. The Texanum expression stays true to its name, and offers up an incredbily robust nose of BBQ and steak spice, with a long savoury finish.
